Flaxseed Cinnamon Muffins- Ooh la la


Okay here we go!

Sorry for the dramatic (week long) pause.



Cook Time: 15 minutes


Preparation: Preheat oven to 350 F. Liberally butter muffin tins. Makes 12 small muffins. Do not use paper muffin liners - they will stick.

1. Pour boiling water over cranberries. Let sit for 5 minutes and pour off water.
2. Mix dry ingredients in bigger bowl and wet ingredients (minus the cranberries) separately, then mix them together.
3. Let mixture stand for 10 minutes to thicken.
4. Fold in cranberries. (You can vary with blueberries, applesauce, or mashed bananas.)
5. Fill each muffin cup about half way (about 2 TBS), and sprinkle with nuts.
6. Bake about 15 minutes or until a toothpick inserted in the center comes out clean.Keep up to a week in the refrigerator or 3 months in the freezer.

Ingredients:
1 cup whole fresh cranberries
1 1/4 cup flax seed meal (can easily grind your own)
1 teaspoon baking powder
3 tablespoons cinnamon
1 teaspoon nutmeg
1/2 teaspoon salt
4 large eggs, beaten
1/4 cup olive oil
1/2 cup sugar-free syrup such as Da Vinci's or Torinis or 1/2 C "sweetening power" from
other artificial sweetener (if powdered, dissolve in 1/2 cup water)
1 tablespoon vanilla
2 tablespoons grated orange peel
3/4 cup chopped walnuts or pecans (optional for topping)

For 12 muffins: Each muffin has 2 grams effective carbohydrate plus 6 grams fiber and 6 grams protein.

Alright, prepare yourselves...

Hi everyone, ready for some text that isn't dripping with Happy Birthdays or odes to joy and testaments of un-dieing love for friends and family members...yeah I am too. I am just about gagging on the sappiness that is "lisa's blog".

Alright enough with the dramatics.

So guess what! (I don't think that exclamation point is necessary especially after I claimed enough with dramatics...to late to change now.) Anyway- so we of the household of _______W ______N, Provo UT (address omitted to keep my thousands of stalkers at bay......for now) are attempting to eat more healthily<-- not sure that's a word but whatever if Bush can make up word so can I. Back to the topic, so in our increasing research into healthilyeatingness I have discovered the amazing flax seed, yep I discovered it, you're welcome.
Anyway so we here at "the house" have been experimenting with recipes with which we can exploit its awesome wholesome-y goodness. I will soon start sharing some of these successful recipes on my blog (Thank you Cassie and Holli and Robin for willingly tasting my experiments and thanks Cassie for the suggestion to post recipes.) Send all hate mail for said recipes directly to Cassie's Blog (Just kidding, but no, really.) For my Rosa

SISTERS

HAPPPPY BIRTHDAY! ! ! ! !

I love you so much. I will never be able to tell you how overwhelmingly lucky I
feel to have you as my big sister. You have always been a voice of understanding and encouragement to me. I am happy that you are always yourself and that you have the confidence to say the things that you feel need to be said and to do what needs to be done. I am completely amazed at the amount of compassion and sensitivity you show to those that need it.

Here are a few things that I wouldn't forget if you paid me.

*I will never forget our notes under the door.
*I won't forget that you pulled off my Barbie's head
*Or that time I bit you on the tushie
( none of these things being in any way my fault. );)
*I will never forget your long luscious perm, your NKOTB (New Kids on the Block) sleep shirt, or how you wore that one piece purple onesie pajama that zipped all the way up the front (including feet pads) until it was uncomfortably tight and then ripped the feet out so you could continue to wear it.
*I will never forget that I am pink and you are purple.

*I will never forget how you and Tabby scared our cousin into thinking you were a witch via the infamous scissor cut on Tabby's hand. *I will never forget how you lit fireworks (worms) on the basement floor, instead of outside on the step so that mom and dad wouldn't find out, pure unadulterated, misguided genius even at such a young age.

*I will never forget how you always told me I was pretty.

*I will never forget that you used to rub in my lotion for me because "it made my hands tired". *I will never forget that you never let your friends be mean to me.
*I will never forget that you always tried to include me.
*I will never forget that you let me be "right" even when I was wrong.
*I will never forget that you let me be myself.
*I will never forget that you will always be there for me.
*I will always think of you when I watch a good (or bad) movie, when I hear the name Crystal, when I eat nachos, when I want ice cream, and when I see a little girl with long black hair in a pretty braid.

Happy Birthday MOMMA!
I love you to the moon and back, I am so happy that you could come out and see us, I miss you tons.

Here is a collection of things about my mom that I love, things that make me laugh, and things that I wouldn't change for the world.

My Mom
Cries every time she leaves one of her kids.
Gets a cold sore when she's stressed.
Is generous to a fault.
Loves her RED sweatpants.
Will wear just about any shoes with any outfit.
Played make believe with me and my sister while "the boys" were out.
Taught me to believe in myself no matter what.
Gave me the confidence to speak from my heart.
Shows me the person I want to be.
Thinks I am the person I hope I become.
Always asks me how I am doing (and really wants to know).
Will probably cry when she reads this post.
